The brainchild of two couples – Jacqui Sacco, Tim Martin, Maggie and Deon Smit, CoConspirators Brewing Company started off as a hobby, but quickly became an obsession. This independent brewing company will soon be opening the doors to their very first permanent brewery and brewpub in mid-2020.
The site located at 377 Victoria Street, Brunswick will feature a 195-seater brewpub with a 12-hectolitre ‘Alpha Brewing’ system and kitchen. After nomad brewing for 3 years in various Melbourne breweries, the brewery will now have a place to finally call “home,” the team is excited to have the opportunity to expand and conspire with other great local producers to create some unique and different beers. They will also continue to contract brew for their wholesale and interstate markets.
The team has strong social and environmental conscience and have proposed to invest in solar energy and thermal dynamic insulation. Furthermore, CoConspirators are investigating aerobic digestion technology to process brewery and food waste into grey water. The use of this new technology to process brewery waste (spent grain) would see an innovation in brewery waste management being introduced within Melbourne.
The brewpub will feature CoConspirators fan favourites such as The Matriarch New England IPA and The Editor Passionfruit & Guava Hoppy Sour, as well as featuring new and exclusive beers that will be made in house and sold only at the venue.
